Biography

Dr. Bartłomiej Zieniuk is an Assistant Professor at the Department of Chemistry, Institute of Food Sciences, Warsaw University of Life Sciences-SGGW in Poland. His research primarily explores enzyme biotechnology and lipid chemistry as they relate to food systems, with particular emphasis on lipase-catalyzed transformations and the design of safe, bioactive phenolic acid esters. He completed his PhD in Agricultural Sciences and the Discipline of Food and Nutrition Technology on October 22, 2021, with a thesis titled “Enzymatic synthesis and study of biological activity of esters of phenolic compounds as food additives.” Building on this, he leads and participates in a project on the enzymatic synthesis of phenolic-acid esters, including a recent project funded by the National Science Centre (Poland), which aims to produce dihydrocaffeic acid esters as safe food additives. Internationally, he is part of the research team for the project “Scientific Exchange to assess Quality and Risks of FOODs obtained by novel processing and packaging technologies” (SEQUR FOOD; HORIZON-MSCA-2023-SE-01-01, Project 101182843), which promotes collaboration across sectors on the safety and quality of foods made using non-thermal technologies. He is also a laureate of a national “Student-Inventor” competition, receiving the Special Award of the President of the Polish Patent Office for a method to produce omega-3-rich microbial oil.
